Use food without waste

We aim at offering a special experience with a luxurious meal by using seasonal, expensive, and rare ingredients.
However, we, the chefs behind the scenes, use the leftover ingredients to cook for ourselves and thus avoid any waste. A typical example of this may be Manshige's famous""boiled sea bream head"".
Kyoto is a city where the ideas of avoiding waste and using ingredients as a whole are still alive, and can be connected to today's SDGs. Since ancient times, Japanese people have been rooted in the idea of nature worship, which is also widely reflected in food. Based on this, I would like to talk about “using ingredients without waste” from a chef's point of view. -

What determines the taste of rice? -Considering a new indicator of rice taste-

Our research has shown that the activity of the enzyme α-glucosidase, which degrades starch into sugar, showed a high positive correlation with rice eating quality. The use of this new rice taste index may revolutionize the rice industry. In addition, the latest nitrogen fertilizer production using plasma will be introduced.
